Ingredients

1/2 c. sugar
1 1/2 tsp. cornstarch
1/4 c. cider vinegar
1/4 c. water
3 c. cooked beets
2 Tbsp. oleo
Preparation

Mix sugar, cornstarch, vinegar and water in a pot; boil for 5 minutes.
Add beets and toss well.
Let stand 30 minutes or more. Just before serving, add oleo and reheat to boiling point.
