Creamy Rice Pudding - cooking recipe

Ingredients
    4 c. milk
    1/2 c. rice
    1/4 c. sugar
    1/4 tsp. salt
    2 eggs
    1 tsp. vanilla
    2 Tbsp. raisins (optional)
Preparation
    In a 4-quart saucepan over medium heat, heat milk, rice, sugar and salt just to boiling.
    Reduce heat to low.
    Cover and simmer for 50 to 60 minutes, stirring occasionally, until rice is very tender.
    In small bowl, beat eggs slightly.
    Stir in small amount of hot rice mixture.
    Slowly pour egg mixture back into rice, stirring rapidly to prevent lumping.
    Add raisins, if desired, stirring constantly for about 5 minutes.
    Do not boil, or mixture will curdle.
    Add vanilla.
    Cover and refrigerate until well chilled.
    Makes 6 servings.
