Eggplant Casserole - cooking recipe

Ingredients
    1 medium eggplant
    1/2 lb. ground beef
    1/2 stick oleo
    2 eggs, slightly beaten
    1 small green pepper, chopped
    1 c. cheese, grated
    1 c. pimento pepper (optional)
    2 c. whole or cream-style corn
    1/2 c. onions, chopped
    salt and pepper to taste
    1 c. cracker crumbs
Preparation
    Peel
    and
    cube
    eggplant
    and\tcook in small amount of water until tender.
    Drain and combine the remaining ingredients\tin baking dish.
    Bake at 350\u00b0 for 45 minutes.\tPut some grated cheese on top.
