Pineapple Meat Loaf - cooking recipe

Ingredients
    1 (8 oz.) can unsweetened crushed pineapple, undrained
    3 Tbsp. reduced calorie catsup, divided
    1 lb. ground chuck
    2 slices bread, crumbled
    2 eggs, beaten
    1 small onion, minced
    1 tsp. prepared horseradish
    1 tsp. soy sauce
Preparation
    Drain pineapple, reserving 2 tablespoons juice.
    Add 1 tablespoon catsup to reserved juice, mixing well.
    Set aside. Combine drained pineapple, remaining 2 tablespoons of catsup and next 6 ingredients.
    Shape into an 8 x 5-inch loaf on rack in broiler pan.
    Bake at 350\u00b0 for 45 minutes; remove from oven and brush with reserve pineapple juice mixture.
    Bake an additional 15 minutes or until done.
