Posoli - cooking recipe

Ingredients
    2 c. Posoli (hominy)
    6 c. water
    3 lb. pork
    1 lb. pig's feet (optional)
    3 Tbsp. red chile or 5 chile pods
    1 small chopped onion
    2 cloves garlic, mashed
    2 tsp. each: salt and oregano
Preparation
    Cook Posoli in water to cover until kernels pop.
    Add red chile and pork.
    Bring to boil in covered kettle.
    Simmer until meat is cooked and corn is tender, at least 3 hours, on low.
    Add more water if needed.
    Add onion and seasonings.
    Cook for 1 more hour.
