Orange Roughy With Orange Herb Sauce(Fish) - cooking recipe

Ingredients
    4 orange roughy fillets (about 1 1/2 lb.)
    olive oil
    salt and freshly ground pepper to taste
    2/3 c. orange juice
    2 Tbsp. mixed chopped fresh herbs (such as basil, chervil, tarragon and fennel) or 2 tsp. dried crushed herbs
    4 Tbsp. butter (1/2 stick)
    1 Tbsp. chopped Italian parsley
    fresh herb sprigs (optional)
Preparation
    Brush fish fillets
    with olive oil.
    Sprinkle with salt and pepper.
    Broil,
    turning
    once.
    Transfer
    to
    warm plates when fillets are almost\tdone in their centers.\tThe fish will finish cooking while standing.
