Beans With Chiles Tezcucana-Style - cooking recipe

Ingredients
    1 lb. fried pinto beans, picked over and rinsed
    10 c. boiling water
    12 oz. slab bacon, cut into thirds
    3 medium onions, chopped
    5 dried ancho chiles, seeded, deveined
    2 to 3 tsp. salt
    1/2 tsp. freshly ground black pepper
    2 Tbsp. butter
    shredded Monterey Jack cheese, shredded iceberg lettuce, sliced radishes, sliced avocado and warm flour tortillas (for garnishes)
Preparation
    Place beans in large saucepan. Add 8 cups of the boiling water, the chunks of slab bacon and 1 cup chopped onion.
    Heat to boiling over medium heat. Reduce heat and simmer 3 hours or until beans are tender.
