Oatmeal Muffins - cooking recipe

Ingredients
    2 c. boiling water
    2 c. large flake oatmeal
    1 1/2 c. brown sugar
    1 c. vegetable oil
    4 eggs
    1 tsp. vanilla
    1 tsp. salt
    2 tsp. baking soda
    3 c. flour (you may use 2 c. all-purpose flour and 1 c. whole wheat flour)
    1 c. dates, raisins, coconut or chocolate chips can be added
Preparation
    In large bowl, pour boiling water over oatmeal.
    Let stand 20 minutes.
    Vigorously beat in the remaining ingredients.
    Fill greased muffin pans 3/4 full.
    Bake at 350\u00b0 for 20 to 25 minutes or until done.
    Makes about 30 medium to large size muffins.
