Daube Pork - cooking recipe

Ingredients
    2 lb. pork, cubed
    2 Tbsp. vinegar
    1 c. onion
    3 Tbsp. chopped garlic
    1/2 c. chopped tomato
    1 tsp. parsley flakes
    1 tsp. thyme
    1/2 c. chopped celery
    1 tsp. salt
    1 tsp. black pepper
    1/2 c. cooking oil
    3 c. hot water
Preparation
    Wash meat in vinegar and water.
    Put all ingredients in bowl and cover.
    Allow to sit 45 minutes to 1 hour for seasoning to penetrate meat.
    Remove seasoning.
    In a pot, add cooking oil and brown the meat.
    Add seasoning.
    Brown 1/2 hour.
    Add hot water and simmer until tender.
    Do not dry out.
    Simmer to a gravy.
