Blueberry Cheesecake Bars - cooking recipe
Ingredients

1 pkg. Duncan Hines bakery style blueberry muffin mix
1/4 c. butter or margarine, softened
1/3 c. finely chopped pecans
1/2 c. sugar
1 (8 oz.) pkg. cream cheese, softened
1 egg
3 Tbsp. lemon juice
1 tsp. grated lemon peel
Preparation

Preheat oven to 350\u00b0.
Grease 9-inch square pan.
Rinse blueberries from mix with cold water and drain.
Place muffin mix in medium bowl.
Cut in butter with pastry blender or two knives. Stir in pecans.
Press into bottom of pan.
Bake for 15 minutes or until set.
Combine cream cheese and sugar in medium bowl.
Beat until smooth.
Add egg, lemon juice and lemon peel.
Beat well. Spread over baked crust.
Sprinkle with blueberries.
Sprinkle topping packet from mix over blueberries.
Return to oven.
Bake for an additional 35 to 40 minutes or until filling is set.
Cool completely in pan on wire rack.
Refrigerate until ready to serve. Cut into bars.
Makes about 16 bars.
