Miniature Cheesecakes - cooking recipe
Ingredients

24 vanilla wafers
2 (8 oz.) pkg. cream cheese, softened
3/4 c. sugar
2 eggs
1 Tbsp. lemon juice
1 tsp. vanilla
1 can pie filling of choice
Preparation

Line cupcake pans with 24 foil cupcake liners.
Place one vanilla wafer in bottom of each liner.
In small bowl, beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy.
Fill the liner 2/3 full with cheese mixture.
Bake at 375\u00b0 for 15 to 20 minutes until set.
Cool.
Top with pie filling. Chill.
