Ratatouille - cooking recipe

Ingredients
    1 onion, thinly sliced
    1/4 c. olive oil
    3 zucchini (1/8 inch slices)
    4 medium tomatoes, peeled and chopped
    2 medium sweet red peppers, chopped (green peppers are okay)
    1 large eggplant, peeled and diced
    1 clove garlic, finely chopped
    1/2 tsp. sugar
    1/4 tsp. white pepper
    1/8 tsp. dry mustard
    1 tsp. lemon juice
    1/4 c. chopped parsley
Preparation
    Cook and stir onion slices in oil until tender.
    Stir in remaining ingredients except parsley.
    Reduce heat; cover and simmer 3 minutes.
    Uncover and cook over medium heat, stirring constantly until liquid is evaporated.
    Watch carefully; turn into serving dish and sprinkle with parsley.
    Makes 6 servings, 130 calories per serving.
