Ingredients

1 (6 oz.) can chopped mushrooms, drained and finely chopped
3 Tbsp. butter
2 Tbsp. snipped parsley
1 Tbsp. all-purpose flour
6 slices boiled ham (fairly thin)
1 slightly beaten egg
1/2 c. all-purpose flour
1/2 c. fine dry bread crumbs
3 Tbsp. shortening
Preparation

Brown mushrooms in butter with parsley.
Add 1 tablespoon flour; cook and stir for 2 minutes.
Cool.
Spread mixture on 1/2 of each slice of ham.
Fold other half over; press to secure.
Dip schnitzel in eggs, then in 1/2 cup flour.
Put back into egg and then into crumbs.
Brown on both sides in hot shortening.
