Frittata With Broccoli And Potatoes(4 Servings) - cooking recipe

Ingredients
    1 1/4 lb. potatoes (3 medium to large), peeled and diced finely
    2 Tbsp. vegetable oil
    10 oz. chopped broccoli (fresh or frozen)
    4 egg whites
    4 whole eggs
    1/4 c. grated Parmesan
    2 Tbsp. minced fresh parsley or 2 tsp. dried parsley flakes
    1/4 tsp. ground black pepper
Preparation
    In a large covered nonstick ovenproof skillet, cook potatoes in oil over medium heat, stirring once or twice, for about 10 minutes or until tender and lightly browned.
