The Victorian Tea Room'S Squash Casserole - cooking recipe

Ingredients
    6 to 8 medium yellow squash
    1 medium onion
    2 beaten eggs
    3 Tbsp. margarine
    2 Tbsp. pimentos
    1/2 bell pepper, chopped
    1 c. mayonnaise
    cayenne pepper to taste
    salt to taste
    1 1/4 c. mild Cheddar cheese, grated
Preparation
    Slice the squash and chop the onion; simmer them together with a little water until tender, 10 to 15 minutes.
    Drain excess water and stir in the other ingredients, reserving 1/4 cup of cheese. Pour the mixture into a greased casserole; sprinkle with the reserved cheese and bake at 350\u00b0 for 20 minutes or until firm. Serves 6.
