Barley And Mushroom Bake - cooking recipe

Ingredients
    1 Tbsp. olive oil
    2 c. sliced mushrooms
    2 c. chopped onion
    1 c. barley, uncooked
    2 1/2 c. hot water
    2 tsp. beef-flavored bouillon cakes
    1/8 tsp. pepper
    2 Tbsp. parsley
Preparation
    Add olive oil in large skillet.
    Saute onions and mushrooms until tender.
    Add barley and saute 4 minutes or until barley is lightly browned. Pour into 1 1/2-quart baking dish, sprayed with vegetable cooking spray.
    Add water, bouillon and pepper. Bake at 350\u00b0 for 1 hour and 15 minutes.
    Gently stir in parsley.
    Yields 8 servings.
