Zucchini Casserole - cooking recipe

3 Tbsp. butter or margarine, melted
3 c. Corn Chex, crushed to 2 c.
1/3 grated Parmesan cheese
1 (10 3/4 oz.) can cream of chicken soup (undiluted)
1/4 c. finely chopped onion
2 Tbsp. snipped parsley
1/4 Tbsp. salt
dash of white pepper
6 c. thinly sliced unpeeled zucchini (about 1 3/4 lb.)

Preparation

Combine butter, Corn Chex crumbs and cheese; set aside. Combine soup, onions, parsley and seasoning.
Stir in zucchini and 2/3 cups Chex mix.
Mix well; turn into 1 1/2-quart shallow baking dish.
Top with remaining crumbs.
Sprinkle with paprika.
Bake in 350\u00b0 oven for 30 minutes or until zucchini is tender and Chex are golden brown.
