Wild Rice Salad - cooking recipe

Ingredients
    1 c. uncooked wild rice
    2 3/4 c. chicken stock
    2 3/4 c. water
    1 c. pecan pieces
    1 c. currants
    grated rind of 1 orange
    1 small can mandarin oranges, drained
    10 oz. frozen baby peas, thawed
    1/4 c. vegetable oil
    1/3 c. fresh orange juice
    1 tsp. salt
    fresh ground pepper to taste
Preparation
    Rinse rice in strainer under cold water.
    Combine with chicken stock and water.
    Bring to boil, reduce heat and simmer, uncovered, for 35 to 45 minutes.
    Rice should not be too soft. Drain.
    Combine rice with remaining ingredients.
    Mix well.
    Let stand 2 hours.
    Serve at room temperature.
