Coconut Bread - cooking recipe
Ingredients

3 c. flour
1/2 tsp. soda
2 c. sugar
4 eggs, lightly beaten
1 c. buttermilk
1 c. chopped walnuts
2 tsp. baking powder
1/2 tsp. salt
1 c. vegetable oil
1 tsp. vanilla
1 c. shredded coconut
Preparation

Combine flour, baking powder, soda and salt.
Set aside. Combine sugar, oil, eggs and vanilla.
Add dry ingredients alternately with buttermilk; stir until moistened.
Fold in nuts and coconut.
Pour into 2 greased and floured 8 1/2 x 4 1/2-inch pans.
Bake at 325\u00b0 for 1 hour or until done.
Freezes well.
