Sock-It-To-Me Salmon Patties - cooking recipe

Ingredients
    2 eggs
    1 Tbsp. instant minced onion
    1 1/2 c. croutons, finely crushed
    1 (16 oz.) can salmon, drained, skinned, boned and flaked
    1/3 c. vegetable oil
    1 (10 3/4 oz.) can cream of mushroom soup, undiluted
    1 (8 oz.) can peas, drained
    2 Tbsp. butter
Preparation
    In large mixing bowl, thoroughly beat eggs.
    Stir in onion, croutons and salmon.
    Stir well to blend.
    Divide mixture into 4 rounded patties.
    Heat oil in skillet.
    Brown patties on both sides.
    Heat mushroom soup in small saucepan.
    Add peas and butter; heat until butter melts, stirring to blend.
    To serve, place patties on platter; spoon soup mixture over patties.
    Makes 4 servings.
