Chicken Breasts Florentine - cooking recipe

Ingredients
    2 (1 oz.) pkg. frozen, chopped spinach
    3 whole large chicken breasts, skinned and boned
    1 rib celery, cut up
    1/2 medium onion, cut up
    1/2 tsp. salt
    1/4 c. butter
    1/4 c. all-purpose flour
    1 c. light cream
    1/2 c. grated Parmesan cheese
    dash of pepper
    ground nutmeg
Preparation
    Cook spinach per package directions.
    Drain well.
    Place chicken with salt, celery, onion and 1 cup water in saucepan. Bring to a boil.
    Reduce heat. Simmer 20 minutes.
    Remove from broth.
    Reserve 1 cup.
    Discard vegetables.
