Turkey And Wild Rice Soup - cooking recipe
Ingredients

4 1/2 c. low-fat, low-sodium chicken broth
2 tsp. olive oil
1/2 c. sliced red onion
2 medium carrots, diced
1 tsp. turmeric
1/2 tsp. ground red pepper
3 c. diced cooked turkey (white)
1 1/2 c. cooked wild rice
fresh ground pepper to taste
Preparation

In a large stockpot, bring the chicken broth to a simmer. Heat oil in a small skillet over medium-high heat. Add the onions and carrots; saut for 10 minutes. Add the turmeric and ground red pepper; saut for 2 more minutes. Add the sauted mixture to the broth. Simmer 10 minutes. Add remaining ingredients and simmer 10 minutes more. Makes 6 servings, 1 cup size.
