Tomatoes Vinaigrette - cooking recipe

Ingredients
    4 large ripe tomatoes
    2 Tbsp. red wine vinegar
    1/4 tsp. dry mustard
    1/4 tsp. salt and pepper
    1/4 c. oil
    2 Tbsp. chopped parsley
Preparation
    Slice tomatoes in wedges.
    In small bowl, whisk vinegar, salt, pepper and mustard until blended.
    Whisk in oil and parsley.
    Pour over tomatoes.
    May add 1 cucumber, sliced.
    Makes 4 servings.
