Orange Roughy With Peppers(Serves 2) - cooking recipe

Ingredients
    2 fish fillets
    2 1/2 tsp. fresh (3/4 tsp. dried) basil
    1 1/2 tsp. fresh (1/2 tsp. dried) oregano
    1 large clove garlic, minced
    1/4 c. sliced green pepper
    1/4 c. sliced red pepper
    1/4 c. sliced yellow pepper
    1/4 c. sliced onion
    2 Tbsp. olive oil
    2 Tbsp. slivered almonds, toasted
    lemon wedges
Preparation
    Preheat oven to 275\u00b0.
    Place fillets in shallow baking dish. Season with salt and pepper.
    Sprinkle with basil, garlic and oregano.
    Bake for 45 minutes.
    Meanwhile, cook peppers and onion in olive oil until crisp-tender.
    Arrange pepper mixture over fish and sprinkle with almonds.
    Garnish with lemon.
