Imitation Canned Pineapple - cooking recipe

Ingredients
    4 qt. peeled and grated zucchini
    1 (28 oz.) can unsweetened pineapple juice
    1 1/2 c. sugar
    1 c. lemon juice
    few drops yellow coloring (optional)
Preparation
    Combine all ingredients and simmer for 20 minutes.
    Pack in pint jars. Cover with juice and seal.
    Process at 10 pounds pressure for 10 minutes. This can be used successfully in any recipe calling for crushed pineapple.
