Chicken Tarragon - cooking recipe

Ingredients
    4 chicken breasts, skin and bone removed
    2 Tbsp. oil
    2 Tbsp. butter
    1/4 c. chopped green onion
    1/4 c. brandy
    1 c. white wine
    2 tsp. dried tarragon
    1 1/2 Tbsp. chopped parsley
    1 tsp. salt
    1/8 tsp. white pepper
    1 c. half and half
    1 egg yolk
    1/4 lb. fresh mushrooms, sliced
    2 Tbsp. butter
    parsley sprigs (for garnish)
Preparation
    Heat oil and butter in a large frying pan.
    Saute chicken until lightly browned and remove to a warming platter.
    Add green onion to drippings and saute about 5 minutes.
    Return chicken to the pan and add brandy, wine, tarragon and pepper.
    Cover and simmer 20 minutes.
