Hungarian Beef Soup - cooking recipe

Ingredients
    3 pieces short ribs of beef
    3 carrots
    4 sprigs celery
    1 cluster fresh parsley
    small onion
    1/4 head cabbage
    4 peppercorns
    salt, pepper and paprika
    1 small potato (optional)
Preparation
    Place ribs in 6-quart pot.
    Cover with water.
    Bring to a boil and skim.
    Tie parsley and celery with string to hold together and add to pot.
    Add remaining ingredients.
    Simmer gently and skim occasionally for about an hour.
    Simmer for 3 hours.
    Serve with noodles.
