Green Tomato Pickles - cooking recipe

Ingredients
    7 lb. green tomatoes
    1 gal. water
    4 pickling lime
    4 lb. sugar
    1 gal. vinegar
    1/4 c. pickling spices
    1 stick cinnamon (2-inch)
    1 tsp. salt
Preparation
    Mix pickling lime and water well, letting any lime that does not dissolve settle
    to
    bottom.
    Select,
    wash,
    dry and slice tomatoes.
    Pour off
    lime
    water and add sliced tomatoes to it. Do
    not
    use
    aluminumware.
    Soak
    24 hours, then wash each piece well
    under
    running water and dry.
    Mix sugar and vinegar and pour
    over
    tomatoes.
    Soak 12 hours.
    Add spices and bring to boil.
    Cook at that point for 30 minutes.
    Place in churn
    or glass
    jars.
    Yields approximately 8 pints.
