Sweet Pickle Relish - cooking recipe

Ingredients
    1 qt. chopped cucumbers (approximately 4 medium)
    2 c. chopped onions (approximately 2 medium)
    1 c. chopped sweet green pepper
    1 c. chopped sweet red pepper
    1/4 c. salt
    3 1/2 c. sugar
    1 Tbsp. celery seed and mustard seed
    2 c. cider vinegar
Preparation
    Combine first 4 ingredients in a large bowl; sprinkle with salt and cover with cold water. Let stand 2 hours or more; drain, rinse and drain thoroughly. Combine sugar, vinegar and spices in large saucepot. Bring to a boil. Add the drained vegetables; simmer for 10 minutes. Pack hot relish into hot jars, leaving 1/4-inch headspace. Adjust caps and seal. Makes approximately 8 half pints.
