Chicken Country Captain - cooking recipe

Ingredients
    3/4 c. shortening
    chicken pieces (I use boneless)
    onion
    garlic to taste
    green peppers
    1 tsp. curry
    1/2 tsp. thyme
    stewed tomatoes
    tomato sauce
Preparation
    Brown chicken in shortening.
    Place skin side up in foil-lined pan (9 x 13-inch works well).
    Brown onion and green peppers in oil.
    Add garlic, thyme, curry, stewed tomatoes and sauce.
    Pour over chicken.
    Cover with foil.
    Bake at 350\u00b0 for 45 minutes. Serve on rice.
