Best Split Pea Soup - cooking recipe

Ingredients
    3 c. dry green split peas
    5 c. water
    1 bay leaf
    2 tsp. salt
    2 Tbsp. oil
    1 c. minced onion
    3 cloves crushed garlic
    1 c. minced celery
    1 small, thinly sliced potato
    2 c. sliced carrots
    1/4 c. dry red wine
    1/4 tsp. dry mustard
    1/4 tsp. thyme
    few drops sesame oil
    3 Tbsp. vinegar
    1 c. chopped tomatoes
    1/4 c. freshly chopped parsley
Preparation
    Start early in the day.
    In a large pot, put peas, water, bay leaf and salt; simmer, covered, for 3 to 4 hours.
    Remove bay leaf.
    Saute onion, garlic, celery, potato and carrots in oil.
    If necessary, add a little water to steam.
    When tender, add to soup.
    Continue simmering.
    About 5 minutes before serving, add wine, mustard, thyme and sesame oil.
    Just before serving, add vinegar, tomatoes and parsley.
    Yield:
    6 servings.
