Ingredients

6 Tbsp. butter
3 eggs
2 c. milk
1 c. flour
1/4 tsp. salt
1 tsp. cinnamon
1 tsp. oil
jam
powdered sugar (optional)
Preparation

Melt the butter in the skillet.
Turn off the heat.
Crack the eggs into a mixing bowl.
Use a wire whisk to beat the mixture for 2 minutes.
Add 1/2 cup milk to the eggs, then add the flour to egg mixture all at once, and use wooden spoon to beat mixture until smooth.
Beat in the remaining 1 1/2 cups milk, add the melted butter, salt and cinnamon.
Add the oil to the skillet. Drop about a tablespoon of the thin batter into the skillet for each pancake.
