Spicy Corn Chowder(Servings: 6) - cooking recipe

Ingredients
    3 Tbsp. olive oil
    1 lb. corn
    2 c. onion, diced
    1 c. carrot, diced
    1 c. celery, diced
    1 red bell pepper, diced
    3 serrano peppers (without seeds), chopped fine
    1 Tbsp. salt
    1 Tbsp. fennel seed
    1 Tbsp. Italian seasoning
    1 tsp. paprika
    1/2 tsp. ground cayenne pepper
    1/2 tsp. red pepper flakes
    1/2 tsp. black pepper
    2 c. chicken stock
    2 c. cream
Preparation
    Heat olive oil in a large heavy-bottom soup pot. Saute corn, onions, carrots, celery and bell pepper over medium heat for 20 minutes or until soft. Add serrano pepper and spices. Stir to mix well and cook 5 minutes longer. Add stock and cream; mix well. Reduce heat and simmer for 45 minutes to 1 hour. Serve hot.
