Zucchini And Shrimp Fritters - cooking recipe

Ingredients
    2 Tbsp. vegetable oil
    1/2 c. chopped onions
    salt and cayenne
    1/2 lb. large shrimp, peeled, deveined and cut into 1/2-inch pieces
    3 eggs, beaten
    1 1/2 c. whole milk
    2 tsp. baking powder
    1 tsp. salt
    3 1/4 c. all-purpose flour
    1 Tbsp. chopped parsley
    Emeril's Kick It Up red pepper sauce
    Worcestershire sauce
    1 lb. zucchini, grated
    solid vegetable shortening (for deep-frying)

Preparation
    Heat the oil in a
    skillet over medium-high heat. Add the onions; season with salt and cayenne and cook, stirring, until the onions are soft, about 3 minutes. Add the shrimp and cook, stirring, until they turn pink, 2 to 3 minutes. Remove from the heat and set aside.
