Bruised Red Cabbage And Apples - cooking recipe

Ingredients
    4 Tbsp. bacon fat or butter
    1 small onion, chopped
    2 apples, cored and peeled
    1/2 tsp. caraway seed
    water
    2 Tbsp. sugar
    4 c. shredded red cabbage
    2 Tbsp. cider vinegar
    salt and pepper
    nutmeg, cayenne, or allspice and clove (optional)
Preparation
    Melt bacon fat or butter.
    Add sugar; stir until brown.
    Add chopped onion; cook until golden.
    Add red cabbage, apples, vinegar, caraway seed, salt and pepper.
    Cook slowly until tender, adding water (or red wine) as necessary to keep from sticking. Serves 4 to 6.
