Apple Latkes - cooking recipe

Ingredients
    2 eggs, well beaten
    1 1/2 c. orange juice, yogurt or milk
    2 c. flour
    1 tsp. baking powder
    1/4 to 1/2 c. sugar
    3 medium apples, peeled and grated
    vegetable oil (for frying)
    confectioners sugar
    dash of salt
Preparation
    Mix eggs with orange juice, yogurt or milk in a bowl.
    In a separate bowl, combine flour, baking powder, salt and sugar.
    Add dry ingredients to the egg mixture along with the apples.
    Heat a thin layer of oil in a skillet.
    Put 1 large tablespoon of batter in pan at a time.
    Cook about 2 minutes on each side until golden brown.
    Drain on paper towels.
    Sprinkle with confectioners sugar and serve.
