Deer Or Elk Sausage - cooking recipe
Ingredients

5 lb. ground meat
2 1/2 tsp. coarse ground pepper
2 1/2 tsp. mustard seed
2 tsp. hickory smoke salt
2 lb. ground beef fat
5 tsp. Tender Quick salt
2 1/2 tsp. garlic salt
1/2 tsp. mace
Preparation

Mix spices together and gradually mix with meat.
Refrigerate for 4 days, mixing every day.
On the fifth day, shape into salami rolls.
Put on broiler rack in broiler pan.
Cook for 8 hours at 140\u00b0 in bottom shelf of oven.
Will form its own crust.
