Chicken Spinach Quiche(Yields 6 Servings) - cooking recipe

Ingredients
    1 (9-inch) pie crust (prebaked)
    1 tsp. butter
    1 scallion, minced
    1 1/2 c. evaporated skim milk
    1 (10 oz.) pkg. frozen spinach, thawed and squeezed dry
    1 (5 to 6 3/4 oz.) can chicken, flaked
    5 egg whites
    1/4 lb. Alpine Lace Swiss cheese
Preparation
    Spread pie crust with butter.
    In saucepan, over medium heat, melt 2 tablespoons butter, adding scallion, and cook until tender, stirring occasionally.
    Remove from heat; set aside.
