Apricot Cottage Cheese Salad - cooking recipe

Ingredients
    1 pkg. lemon gelatin
    1 c. boiling water
    1 c. apricot juice
    1 (12 oz.) carton creamy small curd cottage cheese
    1 c. whipping cream, whipped
    1/2 c. chopped nuts
    1/2 c. chopped maraschino cherries
    1 c. sliced canned apricots
Preparation
    Dissolve gelatin in boiling water.
    Add apricot juice and mix well.
    Chill until jelly-like consistency, then fold in the cottage cheese, walnuts, cherries, apricots and last add the whipped cream. Pour into lightly oiled 1 1/2-quart mold and chill until well set. Unmold to serve.
    Makes at least 8 servings.
