Zucchini Bread - cooking recipe
Ingredients

3 eggs
2 c. grated zucchini, peeled
1 Tbsp. cinnamon
1 1/4 tsp. baking powder
1 tsp. vanilla
1 tsp. baking soda
2 1/4 c. sugar
3 c. sifted flour
1 c. nuts or raisins (optional)
1 c. oil
1 tsp. salt
Preparation

Beat eggs.
Continue beating and add oil, sugar, zucchini and vanilla.
Sift dry ingredients and add to first mixture.
Fold in nuts or raisins.
Spoon into two greased and floured loaf pans. Bake at 350\u00b0 for 1 hour or until golden brown on top.
Cool on rack.
Serves 8.
