Jambalaya - cooking recipe

Ingredients
    4 Tbsp. bacon grease
    4 Tbsp. flour
    2 Tbsp. Worcestershire sauce
    salt and pepper
    1 bell pepper, chopped
    2 large onions, chopped
    1 bunch scallions, chopped
    1/2 bunch parsley, chopped
    3 cloves garlic, chopped
    2 c. long grain rice
    4 c. water
    1 1/2 lb. cubed spicy sausage
    4 chicken breasts, cooked, deboned and cubed
    1 ham slice, cubed
    4 Tbsp. butter
Preparation
    Make roux.
    Add flour to hot bacon drippings over medium heat, stirring continually, until flour is dark brown.
    Do not burn! Add the Worcestershire sauce, salt, pepper, bell pepper, onions, scallions, parsley and garlic.
    Cook until soft, stirring constantly.
    Add water and rice; stir until comes to a boil. Cover; decrease to simmer until rice is cooked.
    In a frying pan, saute sausage, chicken and ham in butter until cooked.
    Add meat to cooked rice mixture.
    Simmer for 2 hours, stirring and adding additional liquid (1 cup chicken bouillon) as needed.
    Serves 10 to 12.
