Walnut And Blue-Cheese Potato Salad - cooking recipe

Ingredients
    1/3 c. chopped walnuts
    1 bag (1 1/2 lb.) refrigerated, ready-to-cook home fries potatoes
    2 c. water
    2 tbsp olive oil
    2 tbsp mayonnaise
    2 tbsp snipped fresh chives
    4 tsp cider vinegar
    1/4 tsp salt
    1/8 tsp sugar
    1/4 c. Maytag or Danish blue cheese, crumbled
Preparation
    Heat a toaster oven to 325 degrees.
    Bake walnuts 6 to 8 minutes until toasted.
    Cool.
    Meanwhile, combine potatoes and water in saucepan.
    Bring to boil, and cook potatoes 4 to 5 minutes.
    Drain in colander.
    Whisk together oil, mayonnaise, chives, vinegar, salt, and sugar in a large bowl.
    Gently stir in walnuts, drained potatoes, and cheese with a rubber spatula to combine.
    Serve warm.
    Makes 4 servings.
