Eggplant Fritters - cooking recipe

Ingredients
    1 medium eggplant, diced, cooked and mashed
    1 c. all-purpose flour
    1 tsp. baking powder
    2 tsp. sugar
    1 egg
    1/3 c. milk
    1 Tbsp. melted shortening or Wesson oil
Preparation
    Beat egg; stir in milk and shortening.
    Add flour mixture all at once and beat until well blended.
    Fold in eggplant.
    Drop by teaspoonful into hot deep fat.
    Brown quickly on both sides and serve hot.
