Deep Fried Eggplant - cooking recipe

Ingredients
    medium eggplant (about 1 lb.)
    1/2 tsp. salt
    1 egg white
    1 c. flour
    2 Tbsp. peanut oil
    1 tsp. ground cumin
    1 tsp. onion salt
    1/4 tsp. cayenne pepper
Preparation
    Pare eggplant; cut in half lengthwise and then into 1/2-inch wide slices.
    Sprinkle with salt.
    Set aside for 15 minutes.
    Beat egg whites until stiff.
    Beat together the flour, milk, 1/3 cup water, 2 tablespoons peanut oil, cumin, onion salt and cayenne. Fold in egg whites.
    Dip in eggplant slices and deep fry at 375\u00b0 for 2 to 3 minutes.
    Drain and serve hot.
