Ingredients

4 Tbsp. butter
2 1/4 c. thinly sliced onion
6 c. beef broth
1 tsp. salt
1/8 tsp. pepper
Preparation

Melt butter in saucepan.
Add onions and cook 3 minutes or until yellow.
Add broth, salt, and pepper.
Cook slowly 20 minutes or until onions are tender.
Do not cover.
Serve with croutons and grated parmesan cheese, if desired.
