Arabic Upside-Down Chicken - cooking recipe

Ingredients
    cauliflower
    chicken pieces
    about 1 c. rice
    olive oil (any liquid may be substituted)
Preparation
    Cut and wash cauliflower.
    Boil chicken in water with small amounts of allspice, nutmeg, cinnamon and a small piece of lemon. Wash or soak rice for about 10 minutes.
    Put olive oil, cumin, garlic salt and regular salt in bottom of casserole dish (season to taste).
    Put chicken in casserole dish, then cauliflower, then rice and pour broth from chicken over ingredients, adding water if needed to cover completely.
    Dot with butter and cook in oven on high for about 10 minutes, then lower heat to medium-high and cook until rice is tender.
