Oatmeal Coconut Crispies - cooking recipe
Ingredients

1 c. shortening (part butter or margarine)
1 c. granulated sugar
1 c. brown sugar, packed
2 eggs
1 tsp. vanilla
2 1/2 c. flour
1 tsp. soda
1 tsp. salt
1 c. rolled oats
1 c. flaked coconut
Preparation

Mix shortening, sugars, eggs and vanilla until fluffy.
Measure flour by dipping method or by sifting.
Blend flour, soda and salt thoroughly; stir into shortening mixture.
Blend in rolled oats and coconut (dough will be soft).
Shape in two rolls, each about 2 inches in diameter.
Wrap in waxed paper; refrigerate overnight. Heat oven to 400\u00b0.
Cut in 1/4-inch slices.
Place on lightly greased baking sheet.
Bake about 12 minutes or until lightly browned.
Makes about 7 dozen cookies.
