Peach Chutney - cooking recipe

Ingredients
    1 3/4 c. raisins
    2 cloves garlic
    1/2 c. onion
    1/2 c. dried apricots
    1/2 c. crystallized ginger or 2/3 c. fresh ginger
    3 3/8 c. (1 1/2 lb.) brown sugar
    1 Tbsp. salt
    2 Tbsp. mustard seed
    2 Tbsp. red chili powder
    4 lb. peaches (about 2 qt. chopped)
    1 qt. vinegar
Preparation
    Grind first five ingredients.
    Simmer all 1 or 2 hours, until thick.
    Pour into 4 hot pint jars. Seal.
