Green Chili Enchilada Casserole - cooking recipe
Ingredients

1 lb. ground beef
chopped onion
chopped bell pepper
10 to 12 corn tortillas
1/4 c. butter
1/4 c. flour
1 c. milk
1/2 to 1 lb. Velveeta
1 small can diced green chilies
Preparation

In large skillet, cook beef with onion and bell pepper.
Set aside.
Heat tortillas, one at a time, until soft.
Set aside and keep warm.
In medium saucepan, melt butter.
Stir in flour until smooth and add milk.
When milk and flour are hot, add Velveeta and green chilies.
When smooth, arrange tortillas in casserole dish; one at a time, fill with ground beef and grated Cheddar or Colby cheese.
Roll each one.
When casserole pan is full, pour sauce over tortillas.
Cover tortillas with sauce and bake at 350\u00b0 for 10 minutes.
