Linguine Turkey Bolognese - cooking recipe
Ingredients

2 Tbsp. olive oil
1 stalk celery, finely chopped
1 medium carrot, finely chopped
1 medium onion, finely chopped
3 cloves garlic, finely chopped
1 lb. ground turkey
1 Tbsp. oregano
1/2 c. red wine
1/2 c. half and half
1 can plum tomatoes (28 oz.)
2 Tbsp. tomato paste
1 c. defatted chicken broth
salt and pepper to taste
1 lb. cooked linguine
Preparation

Saute first 5 ingredients about 5 minutes.
Add turkey and brown slightly.
Add wine and simmer on low heat for 10 minutes. Add half and half; simmer until reduced, about 8 minutes.
Add the tomatoes, tomato paste, oregano and broth.
Simmer, partially covered, for 1 hour.
Serve over pasta.
